I have also seen it used both as an archaic name/part of a name and, more often, in books when people are phonetically spelling how someone with a lisp or other speech impediment says "nice."

Wouldn't someone with a lisp pronounce it "nithe" though?

I'll look for the title when I get home, but I fairly recently read part of a book that involved a character with a speech impediment, and the dialog was phonetically spelled out. It was a mess, and more than vaguely offensive, but I distinctly remember it because of "nishe."
I will admit I Googled it after that, and found other cases of it used that way, especially making fun of people with braces or retainers.
