I have a week off, I'm going to spend half of it trying to get fit so I can go back to rugby training and the other half baking cakes.

That said, I'm not a bad cook but I have NEVER done any baking.

So does anyone have any nice simple cake recipes they could share with me so I can make them?

It's just 4oz self raising flour
4oz marg
4oz caster sugar
2 eggs
1tea spoon baking powder

You can replace some of the flour with coco powder to make it chocolate.

No idea what that is in grams.

No, use Marg.

You wanna use that for each layer.

If you wanna do butter cream for the middle it's just equal ammounts of butter and icing sugar. (eg./ 4oz butter, 4oz icing sugar). If you wanna make it chocolate just throw in some melted chocolate.

Or add lemon juice to the sponge and butter cream mix... Mmmmmm.
Then add some lemon juice and rind (sp?)to some icing sugar for the top of the cake. Phwoar.

Or you can do the same with lime.

orange chocolate chip cake.

1/4 cup shortening
1/4 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 teaspoon vanilla
2 eggs, well beaten
1 package (6 ounces) semisweet chocolate chips, chopped
1/4 cup grated orange peel
1/4 cup chopped pecans or walnuts
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1 cup sour milk

Cream shortening and butter with sugars and vanilla. Add eggs and beat thoroughly. Stir in chocolate pieces, orange peel, and nuts. Stir in the sifted dry ingredients alternately with sour milk. Mix just until smooth.
Pour into a greased and floured 9-inch square baking pan. Bake at 350° for 40 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Cool in pan on rack then cut into squares for serving. Frost before cutting, if desired, or sprinkle with powdered sugar and serve with whipped topping, ice cream, or a vanilla sauce.

Lots of the recipes so far involve too much effort (the creaming all the butter and sugar and shit takes me too long) so this is one you can make really easily if you like Ash;

6 oz self-raising flour
6 oz caster sugar
2 eggs
6-7 tablespoons of water
6 tablespoons of vegetable/sunflower oil
a few drops of vanilla essence/ some cocoa powder (depending on your preference of flavour)

Mix flour and sugar in a bowl.
Make a 'well' in the middle of sugar and flour.
Add 2 eggs.
Add water, oil and vanilla essence/cocoa.
Mix it all round thoroughly (no lumps)
Cut greaseproof paper to fit the tin (it's easier to make fairy cakes but probably less manly:p )
Pour in mixture and cook for 20-25 mins at gas mark 6 (check it half way and move round to cook evenly).
Place on a rack to cool and then decorate with whatever (vanilla frosting is delicious!)

Easiest cake recipe......ever!

I love making cakes :happy: I used to make them for my boyfriend all the time till my oven started screwing up and they wouldn't do in the middle :(

Chocolate Biscuit Cake:

Ingredients

300g (12 oz) digestive biscuits

50g (2 oz) dried fruit - raisins or chopped dates

50g (2 oz) flaked almonds

100g (4 oz) margarine

1 rounded tablespoon of golden syrup or maple syrup

100g (4 oz) plain chocolate

Instructions

1) First, Grease a baking tray.

2) Weigh out 300g (12 oz) of biscuits. Put the digestive biscuits into a plastic bag and tie a knot in the top. Bash the biscuits gently with the rolling pin until you have crumbs. (Or put the biscuits in a food mixer to make crumbs.)

3) Put the fruit and nuts into a mixing bowl with the digestive biscuit crumbs.

4) Break the chocolate into squares, and put it into small bowl with the margarine and syrup. Melt them together by putting the bowl into a larger bowl half full of boiling water.

5) Pour the melted margarine and chocolate over the biscuit crumbs and stir with a wooden spoon until all the crumbs are chocolatey.

6) Tip the chocolate biscuit mixture into the greased cake tin. Spread it out evenly and press it down all over with the spoon.

7) Put your chocolate biscuit cake in the fridge for at least an hour. Cut it into about 12 slices.

I especially like the biscuit bashing part, good stress buster. ;)

But the fitness thing is only to get my running levels up, given that I've done precisely ZERO cardio work for a good half a year, I think I need to get running again :LOL:.

Cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Beat in flour mixture, alternating with buttermilk, until combined. Pour into 2 round 8 inch pans.
Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until a toothpick inserted into the cake comes out clean. Cool completely. Remove paper from the cakes. Cut each layer in half, horizontally, making 4 layers total. Sprinkle layers with the 1/2 cup kirshwasser.
In a medium bowl, cream the butter until light and fluffy. Add confectioners sugar, pinch of salt, and coffee; beat until smooth. If the consistency is too thick, add a couple teaspoons of cherry juice or milk. Spread first layer of cake with 1/3 of the filling. Top with 1/3 of the cherries. Repeat with the remaining layers.
In a separate bowl, whip the cream to stiff peaks. Beat in 1/2 teaspoon vanilla and 1 tablespoon kirshwasser. Frost top and sides of cake. Sprinkle with chocolate curls made by using a potato peeler on semisweet baking chocolate.

Chocolate Fudge Icing

Woo! And it has old school measurements :D

2oz of butter/marg
3 tablespoons of milk
Few drops of vanilla essence
2 tablepoons of cocoa
8oz of icing sugar

1. Melt butter and milk (microwave works well if you keep an eye on it)
2. Stir in vanilla essence and cocoa (sieve the cocoa or the icing will be mega lumpy)
3. Beat in the icing sugar (sieve this as well)

These measurements make uber loads of icing though, so you know.

My speciality is Welsh Cakes, but means you don't like the Welsh I'm not telling you how to make them :p

You'll need,
10 oz of Flour,
10 oz of sugar,
10 oz of margerine, I use Stork.
5 medium eggs,
Jam, Strawberries and cream.

Ok, mix the sugar and the marg together, Make sure the marg is warmish, (not from the fridge) it's easier to mix.
Add the eggs & whisk, an electric whisk is better, as it stops the eggs curdling.
Add the flour and whisk.
Grease two tins, add mixture evenly.
Put in oven, usually 180 degrees, (don't know gas sorry).

Yeah that was kind of my point:D.

But the fitness thing is only to get my running levels up, given that I've done precisely ZERO cardio work for a good half a year, I think I need to get running again :LOL:.

And of course you can have some of my cake!

I have no stamina for running/jogging/cycling, I'll sick with plenty of walking and some boogie down the club :LOL:

:D We made some v nice choc sandwich cake....well it didn't rise enough for it to be sandwich but it was gorgeous and moist :happy:

You'll need,
10 oz of Flour,
10 oz of sugar,
10 oz of margerine, I use Stork.
5 medium eggs,
Jam, Strawberries and cream.

Ok, mix the sugar and the marg together, Make sure the marg is warmish, (not from the fridge) it's easier to mix.
Add the eggs & whisk, an electric whisk is better, as it stops the eggs curdling.
Add the flour and whisk.
Grease two tins, add mixture evenly.
Put in oven, usually 180 degrees, (don't know gas sorry).

Chocolate Fudge Icing

Woo! And it has old school measurements :D

2oz of butter/marg
3 tablespoons of milk
Few drops of vanilla essence
2 tablepoons of cocoa
8oz of icing sugar

1. Melt butter and milk (microwave works well if you keep an eye on it)
2. Stir in vanilla essence and cocoa (sieve the cocoa or the icing will be mega lumpy)
3. Beat in the icing sugar (sieve this as well)

These measurements make uber loads of icing though, so you know.

:D

Sod it, im gonna make some and eat it out of the bowl!

Oh and someone mentioned those rice crispy cakes earlier, well here is the BEST EVER recipe for them :yesey:

3 x 65g Mars Bars, chopped
90g Butter
3 Cups Rice Crispies

TOPPING
200g Milk Chocolate, chopped
30g Butter

Grease on of those 19cm x 29cm I think they're called lamington pans, the rectangular ones...
Combine Mars Bars and butter in large saucepan, stir constantly over low heat (without boiling) until misture is smooth, then stir in Rice Crispies. Put this lot in the pan.
Then make the topping, melt the chocolate and butter in a pan over hot water and stir till it's smooth.
Spread this over your mixture in the pan, and put it in the fridge till it's set.

Those really are SO f'ing yummy :happy: My mum made them for me for my birthday once it was my most popular party as a kid cos the food was good :LOL:

Tomorrow I plan to make this:

Devil's Food Cake (revised)
Yield: 12 servings.

Ingredients
2 cups (400 g) sugar
½ cup + 2 tablespoons (150 g) butter, softened
2 eggs
2 cups (270 g) all-purpose flour
6 tablespoons unsweetened cocoa powder
1 teaspoons baking powder
2 teaspoons vanilla extract
1 cup espresso or very strong coffee
Ingredients for frosting
½ cup butter
14 oz (400 g) semisweet dark chocolate (40-50% cocoa)
3 tablespoon light corn syrup
3 tablespoon hot espresso or very strong coffee

Method

1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C) and grease two 9 in (23 cm) cake tins.
2. Using an electric mixer, cream the butter and sugar on medium speed until creamy, approximately 5 minutes.
3. Add one egg at a time, mix well between each.
4. Add flour, cocoa powder, baking powder and vanilla extract and mix well. Then add coffee and mix well.
5. Divide into two equal portions and transfer to the cake tins.
6. Bake at 350 degrees until a wooden pick inserted in center comes out clean, ca. 35-45 minutes. Let the cakes cool.
7. Slice each cake through the middle to make altogether four layers; if necessary remove the top of the cake by using a knife.
8. For the frosting, mix butter, chopped chocolate, syrup and coffee and heat in a double boiler until melted. Stir until smooth. Let it cool somewhat in the fridge. Use approximately one fifth of the frosting between each layer of the cake, coat the cake with the remaining two fifths of the frosting.
9. Cool the cake in the fridge to harden the frosting. Place the cake at room temperature 1-2 hours before it is served.

Variations
You may substitute the hot coffee with hot water.
